Steak Dinner and Sides for Summer

Summer is quickly approaching and there isn’t anything better than a good steak on the grill paired with fresh seasonal veggies and a nice salad.

We buy our beef from a local farmer, here are few reasons I love doing this.

  • Quality of meat– the quality of the meat we purchase is SO much better than I get at the grocery store. We buy this from a farmer we know and love to support his business.
  • Cost– If you break down the cost savings from buying meat based on the current fluctuating market vs. buying once a year from a local farmer you won’t believe how much you save for better meat.
  • Support Local– I am a big fan of supporting other small businesses, so love getting mine from another local business.

In this recipe we used New York Strip steak and seasoned it with salt, pepper, garlic salt, Montreal steak seasoning, we then drizzled with butter infused olive oil and grilled to our desired wellness.

For the side we used local asparagus from our Wild & Free Subscription Box. We grilled this in butter, salt and pepper wrapped it in aluminum foiled and placed this is on the top rack of the grill while the steak cooked.

While my husband worked at the grill, I worked on putting the salads together and the fingerling potatoes in the air fryer.

I started with Romaine lettuce, I washed and chopped it. Then put in the salad spinner to get any of the access water out. I then placed the lettuce in bowls and topped with chopped cucumber, pepita seeds (I buy these at Horricks Market in their bulk aisle), diced Flavor Bomb tomatoes (you can use any tomato of your choosing, my family likes the sweetness of the flavor bomb), chopped Honeycrisp apple, and added homemade pickled onions (from our blog earlier this month), we also added a sprinkle of Feta cheese.

I am a big fan of making my own dressings and combining flavors to see what I like. At my last shopping trip to Horrocks Market (they have an entire section of infused olive oils and vinegars to choose from), I wanted to try out a new vinegar for summer and came across this Strawberry Peach Balsamic Vinegar. Man, am I so glad I love to experiment because this turned out perfectly.

I like the Good Seasons Italian seasoning packets and they come with a container for making your own dressing usually. Follow the directions on the jar for the vinegar (I used the Strawberry Peach Balsamic Vinegar pictured), add water the next fill line, then add in the olive oil to that designated line (I love to use Olive Oil, but it doesn’t refrigerate well and hardens, so if you want a nice consistency, then you can use regular canola oil if you want to refrigerate).

Once you mix the dressing by closing the lid and shaking until mixed well pour dressing over your salad and wal-la you have a healthy homemade meal to enjoy either by yourself or with family and friends.

For the fingerling potatoes I washed them before hand and poked several holes in each potato. I placed a liner I bought from amazon in the air fryer (this will help keep the bottom cleaner and can be thrown away after each use). Here is the link to the ones I purchased. Once I placed the potatoes in the air fryer liner, I then drizzled with garlic infused olive oil, sea salt, and some rosemary, cooked at 400 degrees for 12 minutes (you can check them at around 10 minutes) once the fork can pierce the potato easily they are ready.

 

Strawberry Peach Dressing

  • ¼ cup Strawberry Peach Balsamic Vinegar
  • 3 Tablespoons of water
  • ½ cup oil
  • 1 package Dry Good Seasons Italian Dressing mix

Combine in a glass jar, mason jar, or salad dressing jar that has a lid. Once all ingredients are added, put lid on and shake until combined. To maintain freshness, refrigerate for up to 4 weeks. Ingredients in dressing will separate when refrigerated, especially when prepared with olive oil. To reuse let dressing stand at room temperature for about an hour then shake before serving.

Asparagus Recipe

  • Wash and cut asparagus ends.
  • Place on aluminum foil large enough to make a pouch with.
  • Cut a few teaspoons of butter and place over asparagus.
  • Sprinkle with sea salt from the grinder to your desired liking.
  • Sprinkle with pepper from the grinder a few turns.
  • Sprinkle with your desired amount of garlic salt.
  • Drizzle with butter infused olive oil, this helps the butter from evaporating quicker and keeps that buttery flavor with adding a healthy oil.
